How can I post date a blog entry?
As it is, if I start writing a blog entry, when I'm done and ready to publish, Flatpress keeps the date that I started the draft and doesn't change it to the day that I actually published it. Is there any way to get Flatpress to use the publish date, rather than creation date when posting entries to the public?

There is no way to change the date of a existing entry, but with the DateChanger Plugin you can made a trick
https://wiki.flatpress.org/res:plugins
The DateChanger Plugin allows you to change a date for a new entry, so take your old entry per copy&paste, make a new entry, change with the DateChanger Plugin the date and paste the content in this entry. Save and delete the old entry, finish.
It is a very helpful plugin when you want to make a quick correction
